    Mediterranean Cucumber Salad

    List of Ingredients


    • 5 cucumbers, peeled
    • 3 tomatoes
    • 1-1/2 red onions, sliced
    • 3/4 cup pitted kalamata olives
    • 3 Tbsp chopped fresh dill
    • 3 ounces feta cheese
    • 3/4 cup extra-virgin olive oil
    • Juice of 1 lemon
    • Salt and white pepper
    • 2 ounces baby arugula greens
    • Sprigs of dill
    • Baby tomatoes


    Instructions


    1. Slice cucumbers lengthwise. Using a small spoon, scoop the seeds out. Dice the cucumbers.

    2. Cut the tomatoes in half. Squeeze the seeds out of the tomatoes and dice.

    3. In a large bowl, combine cucumbers, tomatoes, red onions, chopped dill, olives and feta cheese. Toss in the olive oil and lemon juice. Season with salt and white pepper.

      Serve on platters, garnished with arugula greens, sprigs of dill, and baby tomatoes.
