    Peppery Artichoke Pitas

    List of Ingredients


    • 1 (15-ounce) can Great Northern or navy beans, rinsed and drained
    • 1 (14-ounce) can artichoke hearts, drained and coarsely chopped
    • 1/2 cup torn arugula or spinach leaves
    • 1/4 cup bottled creamy garlic salad dressing (soy mayonnaise or olive oil & vinegar also work)
    • 1/4 tsp fresh ground black pepper
    • 3 large pita bread rounds, halved crosswise


    Instructions


    1. In a medium bowl, combine the beans, artichoke hearts, arugula, salad dressing and pepper. Toss well to combine.

      To serve, stuff each pita half with bean mixture.

      Makes 6 sandwiches.
