Stuffed Manicotti

List of Ingredients
- 1 onion, chopped
- 2 cups mashed water-packed fresh tofu (firm or extra-firm)
- 2 Tbsp tamari or soy sauce
- 1/4 cup whole wheat flour
- 1 tsp sugar
- 1 tsp dried basil
- 1/2 tsp dried dill weed
- 1/2 tsp oregano
- Additional Italian herbs, optional
- Lemon juice, optional
- Fresh ground pepper to taste
- 1 (10-oz.) pkg. frozen chopped spinach, thawed, drained, and well squeezed
- 16 uncooked manicotti shells
- 8 cups spaghetti sauce
Instructions
- Saute onion in small amount of water for 5 minutes. Remove from heat. Stir in all ingredients (except shells and sauce). Add more herbs and a squeeze of lemon juice, if desired.
- Stuff each shell with the filling. Pack tightly because the shells expand when cooked. Pour approximately 2 cups sauce in a 9x13-inch baking dish. Place manicotti shells in dish side by side. Cover with remaining spaghetti sauce.
- Cover and bake at 350 degrees for 35 to 40 minutes. Let stand 5 to 10 minutes before serving.
