    Stuffed Manicotti

    List of Ingredients


    • 1 onion, chopped
    • 2 cups mashed water-packed fresh tofu (firm or extra-firm)
    • 2 Tbsp tamari or soy sauce
    • 1/4 cup whole wheat flour
    • 1 tsp sugar
    • 1 tsp dried basil
    • 1/2 tsp dried dill weed
    • 1/2 tsp oregano
    • Additional Italian herbs, optional
    • Lemon juice, optional
    • Fresh ground pepper to taste
    • 1 (10-oz.) pkg. frozen chopped spinach, thawed, drained, and well squeezed
    • 16 uncooked manicotti shells
    • 8 cups spaghetti sauce


    Instructions


    1. Saute onion in small amount of water for 5 minutes. Remove from heat. Stir in all ingredients (except shells and sauce). Add more herbs and a squeeze of lemon juice, if desired.

    2. Stuff each shell with the filling. Pack tightly because the shells expand when cooked. Pour approximately 2 cups sauce in a 9x13-inch baking dish. Place manicotti shells in dish side by side. Cover with remaining spaghetti sauce.

    3. Cover and bake at 350 degrees for 35 to 40 minutes. Let stand 5 to 10 minutes before serving.

      Serves 6 to 8
