    Vegan: Totally Delicious Vegan Cornbread

    List of Ingredients


    • 2 cups yellow cornmeal
    • 2 cups whole wheat flour
    • 1/3 cup cornstarch or arrowroot powder
    • ¼ cup sugar (use your favorite vegan variety)
    • 2 tsp salt
    • 2 Tbsp baking powder
    • 3 cups soymilk
    • 5 Tbsp melted vegan margarine, cooled


    Instructions


    1. In a large bowl, blend together the cornmeal, flour, cornstarch, sugar, salt and baking powder. Make a well in the center and pour in the soymilk and melted margarine. Whisk together just enough to combine ingredients.

    2. Preheat oven to 375° F.
      Pour batter into two greased 13x9x2-inch baking pans. Bake for 25 to 30 minutes, or just until a toothpick inserted into the center of each loaf comes out clean.

      Serves approximately 24
