    Vegetable Stroganoff

    From "Moosewood Cookbook" by Mollie Katzen

    List of Ingredients


    • 1 cup chopped onion
    • ½ pound chopped mushrooms
    • 2 Tbsp butter
    • 3 cups sour cream
    • 1½ cups yogurt
    • 3 Tbsp dry red wine
    • ¾ tsp salt
    • ¼ tsp dill weed
    • Dash of tamari sauce
    • Paprika
    • Black pepper
    • 6 cups chopped vegetables of your choice *
    • 4 cups raw egg noodles
    • Garnish: freshly minced scallions


    Instructions


    1. Sauté onions and mushrooms in butter until onions are soft. Combine sour cream, yogurt, red wine, salt, dill, tamari, paprika and black pepper in the top of a double boiler and heat gently about 30 minutes.

    2. While the sauce simmers, steam 6 cups chopped fresh vegetables.

    3. Cook egg noodles in boiling salted water until tender. Drain and butter. Assemble the stroganoff on a platter and garnish with freshly minced scallions.

      Makes 6 servings.

    Broccoli, cauliflower, carrots, celery, zucchini, peppers, cherry tomatoes, cabbage
