Vegetable Stroganoff

List of Ingredients
- 1 cup chopped onion
- ½ pound chopped mushrooms
- 2 Tbsp butter
- 3 cups sour cream
- 1½ cups yogurt
- 3 Tbsp dry red wine
- ¾ tsp salt
- ¼ tsp dill weed
- Dash of tamari sauce
- Paprika
- Black pepper
- 6 cups chopped vegetables of your choice *
- 4 cups raw egg noodles
- Garnish: freshly minced scallions
Instructions
- Sauté onions and mushrooms in butter until onions are soft. Combine sour cream, yogurt, red wine, salt, dill, tamari, paprika and black pepper in the top of a double boiler and heat gently about 30 minutes.
- While the sauce simmers, steam 6 cups chopped fresh vegetables.
- Cook egg noodles in boiling salted water until tender. Drain and butter. Assemble the stroganoff on a platter and garnish with freshly minced scallions.
Makes 6 servings.
