Quail: Apricot Basted Quail

- 36 ounces quail or 6 birds
- 6 bacon slices
- 2 Tbsp dark brown sugar

- -- Apricot Basting Sauce --
- ½ cup apricot jam
- ¼ cup dried apricots, finely chopped
- ¼ cup dry white wine
- 1 Tbsp honey
- 1 tsp Worcestershire sauce
Instructions
- Heat all sauce ingredients over low heat, stirring occasionally, until jam is melted. Set aside.
- Heat oven to 400° F.
Wrap each quail in a slice of bacon. Place, breast-side up, at least one inch apart on rack in shallow roasting pan. Sprinkle with the brown sugar. Roast, uncovered, for 30 minutes.
- Brush generously with the basting sauce and roast until done, 15 to 20 minutes longer. Heat remaining sauce to serve with quail.
This goes well with white rice.
