    Quail: Apricot Basted Quail

    List of Ingredients


    • 36 ounces quail or 6 birds
    • 6 bacon slices
    • 2 Tbsp dark brown sugar
    • .
    • -- Apricot Basting Sauce --
    • ½ cup apricot jam
    • ¼ cup dried apricots, finely chopped
    • ¼ cup dry white wine
    • 1 Tbsp honey
    • 1 tsp Worcestershire sauce


    Instructions


    1. Heat all sauce ingredients over low heat, stirring occasionally, until jam is melted. Set aside.

    2. Heat oven to 400° F.
      Wrap each quail in a slice of bacon. Place, breast-side up, at least one inch apart on rack in shallow roasting pan. Sprinkle with the brown sugar. Roast, uncovered, for 30 minutes.


    3. Brush generously with the basting sauce and roast until done, 15 to 20 minutes longer. Heat remaining sauce to serve with quail.
      This goes well with white rice.
