    Venison: Chef Dave's Venison Chili Supreme

    List of Ingredients


    • 3 Tbsp canola oil
    • 1½ pounds ground venison
    • 1 medium onion, chopped
    • 3 hot peppers
    • 2 cloves garlic, crushed
    • 5 Tbsp flour
    • 3 Tbsp chili powder
    • 1 tsp sea salt
    • 1 tsp white pepper
    • 1½ Tbsp cumin
    • 1½ Tbsp oregano
    • 4 cups water
    • 5 beef bouillon cubes
    • 1 can kidney beans (reserve juice)

    • Steamed rice
    • Grated cheese


    Instructions


    1. Heat oil in a skillet.
      Add ground venison, onions, hot peppers, and crushed garlic; cook until browned. Stir in flour and seasonings and cook for 2 to 3 minutes more. Set aside and keep warm.

    2. Place water and bouillon cubes in a large pot and cook over medium heat for about 10 minutes; then add the meat mixture and kidney beans with about half the juice. Simmer for about 1 hour.

    3. When ready, serve chili over a bed of steamed rice and top with grated cheese.
