Duck: Duck Breast with Chipotle Sauce

- 2½ cups orange juice
- ¼ cup lime juice
- 2 Tbsp maple syrup
- 1 Tbsp finely chopped chipotle chilies
- 1 cinnamon stick
- 2 whole cloves
- 1 tsp salt

- 6 (8-ounce) duck breast halves, with skin
- 1½ tsp salt
- ½ tsp black pepper
Instructions
- Place sauce ingredients in a heavy saucepan and boil over medium-high heat. Skim foam occasionally, and reduce to a syrup.
- Add 1 cup water to a broiler pan base and replace rack. Preheat broiler with pan 5 to 6 inches from heat.
- Pat duck breasts dry and score skin at 1-inch intervals. Sprinkle with salt and pepper and broil 5 to 8 minutes, skin side down. Turn over, insert thermometer, and broil until temperature reads 170 degrees. Remove and let stand 5 minutes. Add any excess juices to sauce and simmer until slightly thickened, 1 to 2 minutes.
Cut each duck breast diagonally into thin slices and serve with sauce.
