Moose: Moose Pepper Steak

List of Ingredients
- 1 pound moose steak
- 1 Tbsp paprika
- 2 Tbsp butter
- 2 cloves garlic, crushed
- 1½ cups venison or beef broth
- 1 cup sliced green onions
- 2 green peppers, cut into strips
- 2 Tbsp cornstarch
- ¼ cup water
- 1/8 cup soy sauce (increase to 1/4 cup if you want it more salty)
- 2 large fresh tomatoes, cut in eighths
Instructions
- Cut the steak into strips about 1/2-inch-thick. Sprinkle steak with paprika and allow to stand while preparing other ingredients.
- Using a large skillet, brown steaks in butter. Add garlic and broth. Cover and simmer 30 to 45 minutes, or until tender. Stir in onions and green peppers. Cover and cook 10 minutes more or until onions and peppers are just tender.
- Blend cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring, until clear and thickened (about 2 minutes). Add tomatoes and stir gently. Heat until tomatoes are hot.
Serve over a bed of hot cooked rice.
Makes 3 to 6 servings
