    Mexican Lasagna

    A tasty, easy, Mexican recipe for those days you are in a hurry


    List of Ingredients


    • 1 pound lean ground beef, browned and crumbled
    • 1 (16 oz) can refried beans
    • 2 teaspoons oregano
    • 1 teaspoon cumin
    • 3/4 teaspoon garlic powder
    • salt to taste
    • chili powder to taste
    • 12 uncooked lasagna noodles
    • 1 1/2 cups water
    • 2 1/2 cups salsa
    • 8 ounces shredded Mexican blend cheese
    • 1/2 to 3/4 cup sour cream
    • diced jalapenos may be added to beef if desired


    Instructions


    1. Preheat oven to 350 degrees
    2. Combine ground beef, beans, jalapenos, black olives, sour cream, and spices in mixing bowl.
    3. Place 4 uncooked noodles in bottom of 13 x 9 inch baking pan.
    4. Spread half of beef mix over noodles, sprinkle with one-third of cheese, and then repeat steps 2 to 4. Top with last 4 noodles and rest of cheese
    5. Combine water and salsa and pour over pan. Cover tightly with foil and bake for 1-1/2 hours
    6. Remove from oven, sprinkle with cheese, bake uncovered until cheese is melted, approximately 5-10 more minutes. Let stand 15 minutes before serving.
