Mexican Lasagna
A tasty, easy, Mexican recipe for those days you are in a hurry
List of Ingredients
- 1 pound lean ground beef, browned and crumbled
- 1 (16 oz) can refried beans
- 2 teaspoons oregano
- 1 teaspoon cumin
- 3/4 teaspoon garlic powder
- salt to taste
- chili powder to taste
- 12 uncooked lasagna noodles
- 1 1/2 cups water
- 2 1/2 cups salsa
- 8 ounces shredded Mexican blend cheese
- 1/2 to 3/4 cup sour cream
- diced jalapenos may be added to beef if desired
Instructions
- Preheat oven to 350 degrees
- Combine ground beef, beans, jalapenos, black olives, sour cream, and spices in mixing bowl.
- Place 4 uncooked noodles in bottom of 13 x 9 inch baking pan.
- Spread half of beef mix over noodles, sprinkle with one-third of cheese, and then repeat steps 2 to 4. Top with last 4 noodles and rest of cheese
- Combine water and salsa and pour over pan. Cover tightly with foil and bake for 1-1/2 hours
- Remove from oven, sprinkle with cheese, bake uncovered until cheese is melted, approximately 5-10 more minutes. Let stand 15 minutes before serving.
