Crockpot Beef Brisket

Recipe Introduction
This is an easy recipe with no main ingredients containing gluten. The only substitution needed is for the gravy. It works best in a large (oval) crockpot.
List of Ingredients
BEEF
2 onions
water to cover bottom of crockpot
4 lbs. beef brisket (not corned)
4 cloves garlic, minced
2 TBSP ketchup
1 TBSP red wine vinegar
1 TBSP brown sugar
GRAVY
4 TBSP rice flour (I used brown rice flour)
1/3 c. water
salt & pepper to tasteRecipe
Place onions in bottom of crockpot. Then pour enough water in to just cover the bottom (about 1/4 c in a standard oval crockpot). Place brisket, fat side up, on top of onions & water. Combine garlic, ketchup, vinegar, & sugar in a bowl then use it to coat the top of the beef. Cover & cook on low for 8-10 hours. (I used the 8 hour setting on my crockpot and it came out perfect.)
For gravy, remove brisket from the crockpot & place on serving plate and cover tightly with foil. Strain broth into gravy separator or de-fatting cup. Pour into pan, season with salt & pepper. Mix rice flour with 1/3 c water to make a slightly runny paste (note for those new to GF cooking, this "paste" will not be exactly like the one you get with wheat flour). Whisk flour mixture into pan. Keep stirring until thickened.
