    This is a pretty good chili. Very meaty, so if you like it that way you'll love this chili.

    List of Ingredients




    1 medium onion, chopped
    1 red bell pepper, chopped (I used green 'cuz it's cheaper)
    3 lbs. ground chuck
    2 c. water
    2 16-oz. cans black beans (I used 1 30-oz. can)
    2 6-oz. cans tomato paste
    3 tsp. salt
    1 tsp. black pepper
    1 tsp. ground red pepper (I used 1 tsp. pepper blend because red would be too spicy for the kids)
    1 tsp. cumin
    1 tsp. oregano (it's ok without this. I was out so I didn't use it)
    1 clove garlic, minced (you could probably get away with two or three if you like the flavor)

    Recipe



    (I modified this a bit so the beef was cooked by itself until done. The original recipe calls for the onion, pepper, and beef to all be done together. I also put in about a TBSP of EV Olive Oil with the meat so it wouldn't stick to my pan.)

    In large pot, brown ground chuck. Add remaining ingredients and mix well. Simmer over low heat at least 30 minutes to allow flavors to blend.

    Makes 12 servings.
