Buttermilk Pancakes
List of Ingredients
2 eggs (slightly beaten)2 cups buttermilk2 cups flour1 teaspoon baking soda2 tablespoon sugar (2 to 3)1 teaspoon salt1 1/2 teaspoon baking powder3 tablespoon oil (or melted shortening)Recipe
Use just one bowl. Beat eggs add buttermilk (with baking soda stirred in). Stir, add flour, sugar, salt, and baking powder. Stir. Fold in shortening (DO NOT OVER STIR). Lightly grease or spray with Pam a griddle heated to 375. Spoon 4" circles of batter and turn when puffed up and full of bubbles. May add blueberries or chocolate chips after batter is on the grddle. Makes 12-15.This makes a really light and fluffy pancake.
