Enchilada Casserole
List of Ingredients
1-2 pounds shredded CoJack Cheese4 small cans sliced black olives1-2 dozen corn tortillas (cruz thin corn tortillas are best)2-3 cans enchilada sauce (hot or mild)about 4 pounds cooked meat (roast beef or chicken or combo chicken and beef)2-3 bunches green onions, sliced thinRecipe
This is Margaret's recipe. It is so easy and make a large amount and is easy to halve. Spray 9 x 13 pan with vegetable spray. Warn enchilada sauce in skillet. Heat a skillet with hot oil. Dip corn tortilla in oil for a few seconds. Drain excess oil then dip tortilla in warm enchilada sauce. Line the bottom and sides of 9 x 13 pan. with tortillas. Add meat, cheese, olives and green onions. Repeat layers with tortillas dipped in sauce then other ingredients. End with mixture. Cover tightly. Bake at 350 for 40 minutes or until heated throughly. Serve with Mexican rice, beans or whatever.
