Cream Wafers

1 cup softened butter 1/3 cup whipping cream2 cup flourgranulaed sugarRecipe
These are sooo good. They melt in your mouth! Originally from a Betty crocker cookbook in the 1960's.Sound time consuming but are not!Mix throughly; cream butter and flour, add whipping cream. Cover and chill one hour. Heat oven to 375. Roll about 1/3 of dough at a time 1/8" thick on floured cloth covered board. Keep remaining dough refrigerated until ready to roll. Cut into 1 1/2" circles. Transfer rounds with spatula to piece of waxed paper that is heavily covered with granulated sugar; turn each round so that both sides are coated with sugar. Place on ungreased baking sheet. Prick rounds with fork about 4 times. Bake 7-9 minutes or just until set but not brown; cool. Put cookies together with creamy filling. Creamy Filling:1/4 cup softened butter or margarine3/4 cup confectioner's sugar1 teaspoon vanillaCream butter, confectioner's sugar and vanilla until smooth and fluffy. Tint with a few drops of food coloring. Add few drops of water if neccessary. May add other flavoring. We prefer vanilla.
