2 pounds potatoes (about 6 medium)
2 tablespoons shortening or vegetable oil
1 large onion, thinly sliced, if desired
1 1/2 teaspoons salt
Pepper
2 tablespoons margarine or butterRecipe
PREPARE potatoes for boiling; cut into enough thin slices to measure about 4 cups.
HEAT shortening in 10 inch skillet until melted.
LAYER 1/3 each of the potato and onion slices in skillet; sprinkle with 1/2 teaspoon salt and dash of pepper. Repeat 2 times. Dot top layer with margarine.
COVER and cook over medium heat for 20 minutes.
UNCOVER and cook, turning once, until potatoes are brown.
