Sweet Potato Gratin

1 cup chopped onion
1 garlic clove, mined
5 tablespoons unsalted butter
1/2 cup all-purpose flour
1 teaspoon salt
freshly ground pepper
2 cups milk
2 teaspoons horseradish
3 large sweet potatoes, peeled and shredded (about 4 1/2 cups)
2 cups (8 ounces) shredded sharp cheddar cheese
1 cup panko (Japanese) bread crumbsRecipe
In a saucepan, saute onion and garlic in butter, cook until tender. Whisk in flour, salt and pepper. Gradually whisk in the milk.
Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in horseradish and sweet potatoes. Transfer half of the sweet potato mixture to a greased 9 inch square baking dish coated with cooking spray.
Combine cheese and bread crumbs; sprinkle half the crumb mixture over the sweet potatoes. Cover the crumb mixture with the rest of the potatoes. Bake uncovered, at 400 F for 30 minutes or until golden and bubbly.
Yield: 4-6 servings.
