Zucchini Vegetable Medley

1 medium zucchini or yellow squash, peeled and sliced into 1/4 inch pieces
1 medium onion, sliced
2 medium or 1 large tomato, cut into chunks
2 to 3 tablespoons margarine
2 tablespoon loose chicken bouillon
1/2 lb shredded cheese, optional mozzarella and provolone combinedRecipe
Layer zucchini, onions, tomatoes, margarine, cheese (if using) and bouillon in 2 quart microwave casserole dish. Bake at 350 until zucchini is tender, usually 20 minutes. Serve hot with your favorite bread or rolls or use as a side dish.
