Quick tomato soup
List of Ingredients
2 tablespoon vegetable oil
2 onions, chopped
4 cloves garlic, minced
1 can (28 oz/796 ml) stewed tomatoes
3 cups vegetable or chicken stock
1/4 cup tomato paste
1/4 teaspoon pepper
Recipe
In saucepan, heat oil over medium heat; cook onions and garlic, stirring, until softened, about 5 minutes. Add tomatoes, stock, tomato paste and pepper; bring to boil. Reduce heat and simmer until slightly thickened, about 15 minutes.
Using immersion blender or in blender, puree; reheat if necessary. Makes 4 servings
