    Fortune Cookies

    1 egg
    1/2 cup sugar
    1/4 cup margarine or butter, melted
    1 teaspoon almond extract
    2/3 cup all purpose flour
    1/8 teaspoon salt
    1/3 cup milk

    Recipe

    Prepare 36 fortunes on 2 1/2 x 1/2 inch slips of paper.

    Beat egg slightly in medium bowl. Add sugar, margarine and almond extract; mix well. Lightly spoon flour into measuring cup; level off. Stir in flour and salt. Add milk; stir until well blended.

    Heat ungreased, non stick surface electric skillet or crepe pan to 350 F (medium high heat). Spoon scant tablespoon of batter into skillet; quickly spread to a 3 inch circle. Cook until deep golden brown, about 1 minutes. Turn and cook other side for about 1 minute or until deep golden brown. Remove from skillet.

    Working quickly, place cookie on clean folded towl. Place fortune in cneter of each cookie. Fold cookie in half to form semi-circle. Fold again over edge of bowl, points downward. Place cookies in ungreased muffin cups to hold shape while cooling. After cookies are set, place on wire rack to cool completely. Store in airtight container at room temperature. 3 dozen cookies.

    Tip: If batter is too thick to spread, add 1 to 2 tablespoons additional milk.
