Shrimp Cornbread

List of Ingredients
- 1 lb small shrimp...shelled and deveined
- 1 small onion...chopped
- 1 medium green pepper
- 2 green onions...chopped
- salt and pepper to taste
- 1 12oz box cornbread mix
- 1 14oz can diced tomatoes
- 1 egg
- 1 tbsp butter...melted
- shredded cheddar cheese... to taste
- Pam cooking spray
Instructions
- Preheat oven to 400*.
- Saute the shrimp, onions, green pepper, green onions, salt and pepper together until the shrimp turn pink. About 5 minutes
- Mix together the cornbread mix, tomatoes and egg.Pour the shrimp saute into the cornbread mix and stir until well mixed.
- Spray a 9x13 baking dish with the Pam.
- Pour the shrimp and cornbread mix into the baking dish and bake for 25 minutes.
- Brush the butter on the baked cornbread and sprinkle on the cheese. Turn the oven up to broil and return the cornbread to the oven for about 2-3 minutes or until the cheese starts to melt.
