    Shrimp Cornbread

    List of Ingredients


    • 1 lb small shrimp...shelled and deveined
    • 1 small onion...chopped
    • 1 medium green pepper
    • 2 green onions...chopped
    • salt and pepper to taste
    • 1 12oz box cornbread mix
    • 1 14oz can diced tomatoes
    • 1 egg
    • 1 tbsp butter...melted
    • shredded cheddar cheese... to taste
    • Pam cooking spray


    Instructions


    1. Preheat oven to 400*.

    2. Saute the shrimp, onions, green pepper, green onions, salt and pepper together until the shrimp turn pink. About 5 minutes

    3. Mix together the cornbread mix, tomatoes and egg.Pour the shrimp saute into the cornbread mix and stir until well mixed.

    4. Spray a 9x13 baking dish with the Pam.

    5. Pour the shrimp and cornbread mix into the baking dish and bake for 25 minutes.

    6. Brush the butter on the baked cornbread and sprinkle on the cheese. Turn the oven up to broil and return the cornbread to the oven for about 2-3 minutes or until the cheese starts to melt.
