List of Ingredients
3/4 cup cooked lobster meat, shredded
1/4 cup bamboo shoots, sliced thin
1/4 cup water chestnuts, sliced thin
1/2 cup celery, sliced crosswise, very fine
2 tbsp. canned mushrooms, sliced fine
1/2 tsp. salt
1/2 tsp. Chinese five spice
1/8 tsp. pepper
6 eggs, well beaten
2 tbsp. peanut oil
Recipe
Mix lobster meat with other ingredients, except eggs. When ready to fry, heat oil in skillet, add eggs to vegetable mixture and mix thoroughly. Fry 4 omelets (6 to 7 in.), allowing to brown slightly on both sides. Serves 4.
