Spicy Steak With Fried Coconut

List of Ingredients
- 3/4 cup coconut
- 1/2 lb round steak...cut into 1" cubes
- 1 tbsp olive oil
- 1/4 cup shallots...grated
- 1 clove garlic...grated
- 2 tsp curry powder
- 2 tbsp brown sugar
- 1 tbsp lime juice
- 1 bay leaf...crushed
- salt to taste
- 1/4 cup water
- 1 tbsp soy sauce
Instructions
- Toast the coconut in a frying pan over real low heat until a dark golden brown. Stirring frequently. Set on the side until the meat is cooked.
- Saute the steak in the oil, stirring frequently until browned.
- Add the onion, garlic and cook for about 5 more minutes.
- Add the rest of the ingredients, blend and cook over low heat for 15-20 minutes or until the meat is tender. When the meat is done cooking you should have very little or no juice in the pan.
- Add the toasted coconut and blend.
- Serves 2.
