    Spicy Steak With Fried Coconut

    List of Ingredients


    • 3/4 cup coconut
    • 1/2 lb round steak...cut into 1" cubes
    • 1 tbsp olive oil
    • 1/4 cup shallots...grated
    • 1 clove garlic...grated
    • 2 tsp curry powder
    • 2 tbsp brown sugar
    • 1 tbsp lime juice
    • 1 bay leaf...crushed
    • salt to taste
    • 1/4 cup water
    • 1 tbsp soy sauce


    Instructions


    1. Toast the coconut in a frying pan over real low heat until a dark golden brown. Stirring frequently. Set on the side until the meat is cooked.

    2. Saute the steak in the oil, stirring frequently until browned.

    3. Add the onion, garlic and cook for about 5 more minutes.

    4. Add the rest of the ingredients, blend and cook over low heat for 15-20 minutes or until the meat is tender. When the meat is done cooking you should have very little or no juice in the pan.

    5. Add the toasted coconut and blend.

    6. Serves 2.
