    Creole Baked Macaroni

    List of Ingredients

    8oz elbow macaroni
    1 lb bulk sausage
    4 tbsp sausage fat
    1 medium onion...chopped
    1 green pepper...chopped
    3 & 1/2 cups tomatoes (29oz can)
    1 tsp salt
    1/8 tsp white pepper
    1 & 1/2 tsps sugar
    buttered bread crumbs....enough to cover the top

    Recipe

    Preheat oven to 350*

    Fry sausage and chop into small pieces. Drain, saving 4 tbsp of the fat.

    Saute onion and pepper in the fat until soft.

    Add tomato and seasonings and simmer 15 minutes.

    Cook macaroni according to package directions and arrange in layers with the sausage and tomato mixture in a baking dish.

    Cover with the buttered bread crumbs and bake for 30 minutes.

    Serves 6
