    Pickled Cabbage

    List of Ingredients


    • 1 extra large head of green cabbage...grated fine
    • 1 large green pepper...chopped fine
    • 1 tsp salt
    • Dressing:
    • 1-3/4 cups sugar
    • 1-1/4 cups cider vinegar
    • 1 cup water
    • 1 tsp celery seed
    • 1/2 tsp mustard seed


    Instructions


    1. Mix grated cabbage, green pepper and salt in a large glass or plastic bowl. Refrigerate 1 hour.

    2. Place dressing ingredients in a pot and bring to a boil. Simmer 5 minutes. Cool

    3. Drain or squeeze juice off the cabbage.

    4. Pour dressing over the cabbage and mix well.

    5. Refrigerate for several hours before serving, stirring occasionally.



    Final Comments


    Keeps well in the refrigerator for up to 3 weeks.
    To freeze, put the cabbage in a freezer container, making sure the juice covers the cabbage. Keeps for 6 months.
