Pizza Soup 2
3 5" links of hot Italian sausage, remove casings
1 4 ounce can mushrooms, drained and chopped
1 medium onion, chopped
1/2 green pepper, thinly sliced and chopped
2 cups water
1 14 ounce jar of pizza sauce
1 8 ounce can tomato sauce
1/4 pound thinly sliced pepperoni, quartered
1 medium size tomato, sliced and diced
1/2 tsp Italian oregano
1/2 tsp lemon thyme
1/2 tsp french tarragon
1 tsp montreal steak seasoning
ground black pepper to taste
1/4 cup grated parmesan cheese
shredded mozzarella, for garnish
Recipe
In a 4/5 quart sauce pan, start to brown the sausage. When the sausage is about brown, add the onions, mushrooms, and green peppers. Saute until onions are wilted. Next, add the pepperoni. Cook and stir about two minutes. Drain off any oil.
Add the water, pizza and tomato sauces, and seasonings. Bring to a boil over medium heat. Reduce heat. Simmer twenty minutes, stirring occasionally. Just before serving, stir in the parmesan cheese. Use mozzarella for garnish.
