Potato Soup With Celery and Eggs
Here in this part of Pennsylvania we grow a lot of potatoes and at this time of the year (Fall) the crop is being harvested. Hope you enjoy this recipe.
List of Ingredients
- 2 cups diced potatoes
- 1 medium onion...chopped
- 3 cups water
- 1/4 cup celery
- 2 tbsp butter
- 3 hard-cooked eggs...chopped
- 1 qt of milk...heated, but not boiled
- 1 tbsp chopped parsley
- salt and pepper to taste
Instructions
- Boil diced potatoes and onions in 3 cups water.
- Add 1 tsp salt.
- Add chopped celery when the potatoes are partially cooked.
- When the potatoes are soft, pour in the heated milk and the chopped eggs.
- Add the parsley and the butter just before serving.
- Serves 4.
