Recipe Introduction
This is great and easy to make.
List of Ingredients
1/4 cup sliced green onions and/or chopped green pepper
3 Tbsp margarine or butter
3 cups loose pack frozen hash brown potatoes
9 eggs
3 Tbsp milk
1/2 tsp pepper
1 1/2 cups diced fully cooked ham
1 cup sliced fresh mushrooms or 2 1/2 oz jar sliced mushrooms
1 cup shredded cheddar cheeseRecipe
In the 3 qut cook onions, green pepper and fresh mushrooms with margarine, uncovered on 100% power for 2-3 minutes or until tender.
Add potatoes.
Cook, covered on high for 8-10 minutes or until potatoes are tender, stirring once.
Combine the eggs and milk in the Quick Shake with pepper. Stir into the potato mixture.
Add the ham and 1/2 cup cheese and cook uncovered, on high for 6-8 minutes or until eggs are almost set, pushing cooked portions to center.
Then microwave another 2-3 minutes.
Sprinkle remaining cheese on top, let stand covered about 2 minutes until the eggs are set.
