Sweet Potato Pancakes

Ingredients:
1 large sweet potato, peeled, grated
(2 cups)
2 green onions, thinly sliced
1 egg white
1 Tbs. Oatmeal flour
3/4 tsp. Tabasco pepper sauce
Recipe
Preparation:
Combine grated sweet potato, onion, egg, flour, Tabasco in a medium bowl. Heat a Pam** sprayed 12-inch skillet over medium heat. Working with half the mixture at a time, drop 1/4 cup of it into the skillet, spreading with the back of a mixing spoon to a 3-inch round.
Cook three to four minutes on each side, turning once. Repeat with remaining mixture, Spray more as needed. Serve hot.
Yield: 8 potato pancakes
