    List of Ingredients




    10 oz shredded carrots

    10 oz frozen chopped spinach, thawed, drained and squeezed dry

    12 oz shredded potatoes

    1 tbsp onion powder

    1/2 cup oat flour

    4 egg whites

    1/4 tsp pepper

    Recipe



    Line baking sheet with foil. Spray with non-stick cooking spray** if desired. Combine all ingredients and mix until moistened. Heat skillet using non-stick cooking spray** and drop by heaping spoonfuls onto skillet, flattening with back of spoon. Cook 2 minutes, turn, pressing down and cook 2 minutes more or until crisp brown. Remove, place on baking sheet in warm oven. Repeat until completed. Optional: serve with applesauce.
