    One of my favorites. The longer it cooks, the more tender. A complete meal, great for leftovers!


    List of Ingredients




    1 small-medium Sirloin Tip roast

    8-10 red skin potatoes, quartered

    1 cup baby carrots

    2 cups fresh green string beans

    1 onion, cut in med pieces

    2 cups mushroom caps, quartered

    black pepper (I use a lot with beef)

    3/4 tsp rosemary (more or less to taste)

    3/4 tsp bay leaf (more or less to taste)

    2 cups no-sodium beef broth

    Recipe



    Clean and cut vegetables. Put in bottom of crockpot. Put Roast on top of veggies, pour in beef broth. Add rosemary and bay leaf. Coat top of roast with black pepper. Cook on high for 4-6 hours depending on your crockpot and size of roast. I usually check roast after 3-4 hours to judge how it's cooking.
