    I have this as a pre-workout meal.

    Recipe Introduction


    This is one of those things that I just threw together so I really didn't pay much attention to how much or how long...so here goes.

    List of Ingredients




    1 medium sweet potato
    1 medium apple
    *1-2 tsp apple pie spice or pumpkin pie spice, or to taste
    1 packet of sweetener, if desired
    Dash of Extract, lemon, vanilla, etc., or to taste
    Water

    *You can use a combination of cinnamon, or nutmeg, or other spices if you do not have the apple pie or pumpkin pie spice or if you just want a different taste.

    Peel and cut sweet potato into cubes. Since the sweet potato takes longer to cook than the apple, I cook the potato a little before adding the apple. Put the sweet potato into a baking dish, add the spices, sweetener, extract, and mix well to coat the sweet potato. I add a little water to the bottom of the dish to prevent sticking. Cover and cook in a 375 degree oven for approx 15-20 minutes or until it is getting soft but not quite done. Then peel and cut apples into cubes and add to sweet potato...return to oven and cook for an additional 10-15 mins.

    All times are approx because I just cook it until it suits me. Just check it periodically and see how soft you prefer it to be.
