    Gingered Rice with Spinach

    2 1/2 cups low salt chicken broth
    2 cloves garlic, minced
    2 tablespoons grated fresh gingerroot
    1 cup uncooked white rice
    4 cups chopped fresh spinach leaves
    1/4 teaspoon ground black pepper

    Recipe



    Bring broth to a boil in a saucepan. Add garlic, gingerroot and rice. Return to a boil, reduce heat, and simmer until rice is just tender, about 20 minutes. Place spinach in a steamer basket over 2 cups of water, cover and steam until just tender, about 2 minutes. Transfer rice to a serving bowl andmix in spinach. Sprinkle with black pepper and serve.
