    3 cups low salt chicken broth
    3/4 cup uncooked wild rice
    3/4 cup uncooked white rice
    4 scallions, finely chopped
    2 medium red bell peppers, cored and small dice
    2 medium green bell peppers, cored and small dice
    2 tablespoons lemon juice
    1/2 teaspoon dry mustard
    1/2 teaspoon dried basil
    1/2 teaspoon dried oregano
    2 cloves garlic, minced
    1/4 teaspoon ground black pepper

    Recipe



    Bring broth to a boil in a saucepan. Add the two rices. Return to a boil, reduce heat, cover and simmer until rices are just tender, about 25 minutes. Remove from heat, and allow to cool to room temperature.
    Combine the cooled rice, scallions and bell peppers. Toss well. Whisk together the lemon juie, mustard, basil, oregano, garlic, and black pepper. Pour the dressing over hte rice and toss well. Refrigerate for 1 hour before serving
