    Fancy Vancy's Chili

    Source of Recipe

    From Member = Rosy

    Recipe Introduction

Do you fancy a hot bowl of chili. Family tradition served our chili up over a bowl of fritos. *Leaning* towards leaner days, (to replace the crunchiness of fritos), we now use thin sliced chunks of jicama. Just slice this veggie up about the size and thickness of a frito and you are all set to go. The sliced jicama goes right in the fridge with the chili, which needs refrigerated overnight and reheated the next day to allow all the flavors to blend.

    List of Ingredients

    1 pound ground white turkey
    1 large onion diced
    1 clove garlic diced
    1/2 teaspoon ground black pepper
    1 jalepeno pepper diced
    1 red bell pepper diced
    1 green bell pepper diced
1/4 cup Bolner's Fiesta Extra Fancy Menudo Mix
    3 packets Splenda
4 cans Sodium free diced tomatoes
2 cans Lower Sodium 100 percent fat free beef broth
    1 bag Boil-In-The-Bag Uncle Ben's rice
    1 large jimcama thinly sliced

    Recipe

Brown turkey with 1/4 of can of beef broth, onion, garlic and ground black pepper in a non stick skillet. In a crockpot add the cooked turkey, diced peppers, the chili seasoning mix, Splenda, tomatoes, remaining broth and rice. Crockpot on high for 4 hours. Chill overnight. Next day, reheat chili and serve over the sliced jicama.
