    List of Ingredients




    1 1/2 cups pinto beans, soaked
    4 cups of chicken stock (recipe below)
    2 lbs of ground turkey
    2 cups of chopped onion
    2 cloves of garlic, minced
    2 ribs of celery, chopped
    2 tbsp ground cumin
    2 tbsp ground chili powder
    pinch of cilantro
    1/4 cup white wine
    juice of 1/2 lemon
    2 cups of tomato puree.

    Chicken Stock (I had to scale this down. the orginal is for 4 gallons)
    5 lbs of chicken bones
    4 gallons of water
    1 lb mirepoix(diced carrots, onion and celerey)
    bouquet garni--2 bay leaves, 1 tsp thyme, 1 tsp peppercorns (wrap these in cheese cloth)
    6 cloves of garlic
    3 parsley stems

    Recipe



    Simmer the beans for about an hour in three cups of the stock. Brown the meat. then Saute the onion and garlic until transparent. Add the celery, seasonings and wine, along with the lemon juice, remaining stock and tomato puree. Stir to mix and bring to a boil. Simmer until thickened. When the beans are tender, add them to the sauce along with the ground turkey. Simmer for twenty minutes or until flavors are blended.

    Wash bones, place bones in stock pot and cover with water. Bring to a boil and reduce to simmer. Cook at simmer for one hour. Add mirepoix and bouquet garni. then simmer for three hours. Skim the fat and strain. Can be frozen for future use.
