Baked Stuffed Pumpkin Pudding

2 pound pumpkin, washed
2 apples, cored, quartered
1/2 cup pineapple chunks
1/4 cup oat flour
1/3 c Splenda
1 egg white
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
Recipe
Cut the top off the pumpkin and remove the seeds. Place cut side down
in a
baking pan and bake at 350 degrees F for about 40 minutes or until
soft.
With a metal spoon, scrape out the cooked pumpkin, leaving a 1/8 to 1/4
inch
thick shell. Process the apples and pineapple in a food processor or
blender
until blended. Add the remaining ingredients and mix well. Spoon into
the
pumpkin shell. Cover with the top of the pumpkin. Bake on the pan in a
400-degree F
oven for 1 hour. Let sit 1 hour before serving.
Yield: 6-- 1/2 c servings
