    Chrispy's Apple Spice Puffy Omlet

    4 Egg Whites

    1/4 cup water

    1/4 teaspoon cream of tartar

    1/4 teaspoon Splenda

    1 apple, cored and thinly sliced

    1 tablespoon Sweet and Low brown sugar

    1/4 teaspoon ground cinnamon

    1/4 teaspoon Nutmag

    Pam**

    Recipe

    Preheat oven to 350°F.

    In large mixing bowl, beat egg whites with water and cream of tartar at high speed until stiff but not dry, just until white no longer slip when bowl is tilted. Gently, but thoroughly, Sugar into whites.

    In 10-inch omelet pan or skillet with ovenproof handle* over medium-high heat, heat half the butter until just hot enough to sizzle a drop of water. Pour in egg mixture and gently smooth surface. Reduce heat to medium. Cook until puffed and lightly browned on bottom, about 5 minutes (lift omelet at edge to judge color). Bake in oven until knife inserted halfway between center and outer edges comes out clean, about 10 to 12 minutes.

    While omelet bakes, heat sprayed with Pam** a medium skillet over medium heat. Sauté apple until tender-crisp, about 5 minutes. Stir in brown sugar and cinnamon until well blended; hold warm.

    When the omelet is done, cut upper surface down center of omelet but DO NOT cut through to bottom of omelet. Fill with sautéed apple mixture. Tip skillet. With large spatula, fold omelet in half and invert onto warmed plate or platter with a quick flip of the wrist.

    Cut in half or into wedges. Serve immediately.

    *To make handle ovenproof, wrap completely with aluminum foil.
