    1 pound bones and trimmings of any white fish chopped
    1 cup sliced onion
    1/2 cup dry white wine
    2 tablespoons fresh squeezed lemon juice
    3 to 4 cup purified water
    1 to 2 bay leaves

    Recipe



    Put all ingredients in a heavy saucepan and bring to a boil. Skim the froth that collects at the surface and discard. Reduce the heat and simmer for 30 minutes. Strain the stock through a fine sieve. Pur into an airtight container and store in the fridge up to 2 days, or in the freezer for up to 3 months.
