    This classic Greek shrimp dish is baked with a tomato sauce. Relatively quick and simple to make.




    List of Ingredients




    4 tablespoons chicken stock
    1 medium onion, finely chopped
    3/4 cup chopped green onion
    2 cloves garlic, crushed
    2 cups chopped, peeled tomatoes
    1/2 cup dry white wine
    1/4 cup chopped fresh parsley
    1 tablespoon chopped fresh oregano
    pepper to taste
    2 pounds large uncooked shrimp, peeled

    Recipe



    1. Heat chicken stock in a skillet over medium heat. Saute onion until transparent. Stir in green onions and garlic; cook, stirring frequently, for 2 more minutes. Stir in tomatoes, wine, most of the parsley, oregano, and pepper to taste. Cover, and simmer gently for 30 minutes.

    2. Preheat oven to 500 degrees.

    3. Spread half the sauce on the bottom of a large oven dish. Arrange shrimp evenly over sauce, and pour the remaining sauce on top.

    4. Cook in preheated oven for 10 to 15 minutes, until shrimp are pink. Sprinkle with remaining parsley, and serve immediately.
