Grilled Catfish and Salsa

3 fresh tomatoes or 1 can salt-free diced tomatoes
1/4 cup onions
2 med jalapeno peppers, chopped
2 tbsp white wine vinegar
4 catfish fillets
1/2 tsp garlic, or to taste
1/2 tsp pepper
red pepper, paprika, onion powder, thyme, oregano to tasteRecipe
Mix tomato, onions, jalapeno peppers, and wine vinegar. Let sit for at least 30 minutes. Meanwhile, sprinkle garlic and pepper on fish fillets. Then sprinkle any additional spices of your choice on fillets and grill on George Foreman grill. Top with salsa.
