Just thought I would share a tip I do. I have a muffin tin that measures 1/4 cup per muffin size. Measure my mashed potatos or mashed baked sweet potatos, in to eack section and level off witha knife, Place pan in freezer, when frozen, I packet two portions into a zip-lock bag. I have a carb in a hurry.
