Muffins for when you can't have a fruit with a carb for 1 serving.
To make larger serving just double the recipe (or triple)
List of Ingredients
2 egg whites
3 packs Splenda
1 tsp vanilla
1/4 cup oatmeal ground into flour
1/2 tsp SODIUM FREE baking powderRecipe
Beat together the eggwhites, Splenda and vanilla. Add the flour and baking powder. If the mixture seems too thick add a small bit of water. Bake at 350 for 10-12 minutes in a nonstick muffin pan..
Variations for this recipe too.....
Citrus Muffins: use orange or lemon extract in place of the vanilla
Pseudo Pumpkin Muffins: add 1 tsp pumpkin pie spice
Cinniminny muffins: add 1 tsp cinamon
Basically add any extract you might like to change the flavor
****Also if you are allowed fruit and a carb together try ~
1/2 cup mixed berries
1/2 strawberries
and so on...
