    List of Ingredients




    2 cups Oatmeal flour
    2/3 cup brown sugar twin
    1/3 cup splenda
    1 tablespoon baking powder
    1 teaspoon ground cinnamon
    1/4 teaspoon baking soda
    1/4 teaspoon ground ginger
    1/2 cup Apple Sauce un sweetened
    1/2 cup LIBBY'S 100% Pure Pumpkin
    2 large eggs whites, lightly beaten
    1/3 cup rice milk

    Recipe



    PREHEAT oven to 400°F. Grease or paper-line 12 muffin cups.
    COMBINE flour, brown sugar, sugar, baking powder, cinnamon, baking soda and ginger in large bowl. Combine apple sauce, pumpkin, eggs and rice milk in medium bowl. Add to flour mixture, stir just until moistened. Spoon into prepared muffin cups, filling 3/4 full.

    BAKE for 15 to 20 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 5 minutes; remove to wire rack to cool completely.

    FOR MICROWAVE SPICED PUMPKIN MUFFINS:
    PREPARE muffins as above. Paper-line 6-cup microwave-safe muffin cups. Spoon one-third of batter into prepared cups, filling 1/2 full. Microwave on HIGH (100%) power, turning half way through, for 2 1/2 to 3 1/2 minutes or until muffins are dry on top. Repeat with remaining batter.
