    SPINACH PESTO SALAD PIZZA

    Pizza 1 Crust originally from member: lookintolose
    1 egg white, beaten until frothy
    1/4 - 1/2 cup oat flour
    garlic powder, to taste

    then comes the spinach pesto.
    2 cups packed spinach leaves
    2 tablespoons fresh basil or 2 teaspoons dried basil
    2-3 cloves of garlic, peeled and chopped.
    1/4 teaspoon lemon juice.
    combine all ingredients in food processer and process until
    smooth. (I tried this in a blender and it did not work so well)

    2 ounces protein.
    1 red pepper (sliced)
    1 green onion
    1 firm, ripe Roma tomato
    2 cups spinach leaves (cut into slivers)
    cook protien, red pepper, green onions in water until tender.
    and protien is fully cooked.

    I use the pizza 1 recipe to make the crust. But I add onion powder, garlic powder, red pepper and any other spices that I feel like at the moment. Combine beaten egg white with oat flour and garlic powder(and other spices Amber suggested). Mix by hand, adding water if necessary. Heat a non-stick skillet until very hot. Spray lightly with cooking spray**(this is not allowed on plan, I think a good nonstick pan should do the trick anyhow). Pour flour mixture into pan. Cook until brown, then flip and cook other side until brown. Cool on wire rack.

    (I make a few at once so that I can freeze them and pull them out and pop them in the toaster oven.)

    combine all ingredients in food processer and process until

    Toast pizza crust in oven or toaster oven until crispy. Pull out and top with pesto mixture. Add veggies and chicken and toast for another 3-5 minutes until warm.
