I love curry chicken, so I will probably try this soon. FYI: To change the original recipe, I omitted 1 1/2 tsp salt and 1 tsp vegetable oil and changed chicken thighs to breasts.
List of Ingredients
1 tsp ground coriander
1 tsp ground cumin
1 tsp chili powder
1 tsp grated, peeled fresh ginger
1/4 tsp ground tumeric
4 c finely chopped onion
2 garlic cloves, minced
3 1/2 c coarsely chopped, peeled tomato (about 1 1/2 lb)
2 Tbsp fresh lemon juice
12 skinless chicken breasts
1 1/2 lb peeled baking potatoes, cut into 1 in pieces
1/4 c chopped fresh cilantro
Recipe
Combine first five ingredients. Heat dutch oven on high, then reduce to medium. Add 1 Tbsp water, onion and garlic; cook 15 min, stirring frequently. Add the cumin mixture, tomato and lemon juice. Cook 10 min, stirring occasionally. Add chicken and potatoes to pan; stir in chopped cilantro. Bring to a boil; cover, reduce heat, and simmer 50 min or until chicken is done.
Suggestion is to serve over rice. Would be too much carbs for us with the potatoes, but if you left the potatoes off... have your rice.
