Ingredients:
4 skinless boneless chicken breast
1 1/2 tbsp fresh ginger root -- chopped
or grated
2 tblsp oatmeal flour
1 can low sodium chicken broth
2 tsp fresh cilantro -- minced
Recipe
Instructions:
In a large, non-stick skillet, over medium heat with 1/4 cup water, Add chicken and cook, turning until the surface turns white. Remove to shallow baking dish and stir in ginger and cook for 1 minute. Sprinkle flour over surface of skillet and allow it to brown slightly. Gradually add broth, stirring constantly as mixture thickens. Spoon sauce over chicken and bake for about 20 minutes, until chicken is cooked through. Sprinkle with
cilantro/parsley and serve
