    Recipe Introduction


    Timesaver: Use diced tomatoes or stewed tomatoes instead of whole tomatoes. I added a BAY LEAF and cut the meat in chunks with scissors. Very Good! Use same sauce for shrimp, scallops, fish, ground turkey.

    List of Ingredients




    1 lb chicken breasts (cut in chunks)

    2 cups sliced mushrooms
    2 cups chopped bell peppers
    3/4 cup chopped onion
    3 garlic cloves, minced
    1-16 oz can whole tomatoes, undrained and coarsely chopped
    3/4 cup tomato juice
    1/2 cup water
    1/4 cup tomato paste
    1 tbsp sugar substitute
    2 tsp dried rosemary
    1 tsp dried basil
    1 tsp dried oregano leaves
    1/4 tsp black pepper

    cooked rice or rice noodles

    Spray a large nonstick skillet or Dutch oven with cooking spray**; heat over medium heat until hot. Cook chicken 3-4 minutes or until browned on all sides.

    Add mushrooms, bell peppers, onion, and garlic to pan; cook and stir 3-4 minutes. Add remaining ingredients (except rice or noodles) to pan; heat to a boil. Reduce heat to low and simmer, uncovered, about 30 minutes or until chicken is no longer pink in center. Serve over rice or rice noodles.
