    List of Ingredients




    3 boneless chicken breast halves or lean pork chops
    1-1/2 cups chopped fresh pineapple
    1/2 cup sliced carrots
    1/2 cup sliced red bell peppers
    1/2 cup sliced green bell peppers
    1/2 cup sliced onion
    4 tbsp Splenda
    1/2 cup cider vinegar
    2 tbsp lemon juice

    Cube and sauté meat in a little water. Remove when done and add a little more water to deglaze the pan. Add carrots, onions, and peppers and sauté until just done. Add 1-cup pineapple, cover and reduce heat. Meanwhile in a food chopper/processor, chop or blend the remaining ingredients (1/2 cup pineapple, lemon juice, vinegar, Splenda) until smooth. Taste sauce to be sure it is sweet and sour enough. Adjust taste by adding more vinegar or Splenda. Return meat to pan with vegetables and top with sauce. Heat to simmering. Serve with rice.

    It was very good. I did not have cider vinegar so I used red wine vinegar. Next time I make it I will use cider vinegar. I highly reccomend trying this one.
