A tart yet sweet baked chicken with lemon and pineapple for a hint of Island living.
List of Ingredients
boneless chicken breasts
1 (8 ounce) can crushed pineapple with juice
1/2 cup white Splenda
2 tablespoons lemon juice
1 teaspoon mustard powderRecipe
1. Preheat oven to 350 degrees F.
2. Combine the pineapple (with juice/ liquids), Splenda, lemon juice and dry mustard in a small bowl. Mix all together.
3. Place chicken breasts in a lightly greased 9x13 inch baking dish. Spread the pineapple mixture over the chicken. Bake in the preheated oven for 50 to 60 minutes.
4. Serve over rice.
